2 ingredients chocolate pudding
This is super easy, quick, dairy free, healthy and delicious.
I divided it to 6 portion, nutrition facts per serving:

Ingredients:
400 ml can of coconut milk
70 g dark chocolate (min 70%)
optionally sweetener
Preparation:
Heat the coconut milk in a non stick pot, stir constantly so it would not burn
Once coconut milk is just about to boil, remove from heat and add the chocolate. Stir until chocolate melts and taste to see if you need any sweetener
Let it cool down a bit and then pour into small jars, cups or ramekins and refrigerate for at least 2 h before serving or optionally put in the freezer for about 30 minutes
