Aromatic beef & zucchini stew

Aromatic smell and taste in this recipe is achieved with a combination of slow cooking and different spices and herbs used. Cooking time is about 2 hours which makes the meat tender and the stew full of taste.


  • 3 tbsp olive oil

  • 400 grams diced beef

  • 1 medium size onion, diced

  • 2 garlic cloves, diced

  • 2 tbsp diced bacon

  • 1 tbsp chia seeds

  • 1/2 bell pepper (I mixed equal part of red, green and yellow bell pepper)

  • 400 ml of water

  • 2 tbsp tomato paste (from the tube)

  • 1 zucchini

  • Spices & herbs:

  • 1/2 tsp salt

  • 1 tsp garlic

  • 1/2 tsp black pepper

  • 1/4 tsp coriander

  • 1/4 tsp thyme

  • 1/4 tsp basil

  • 1/4 tsp sage

  • 1/4 tsp bay leave

  • 1/4 tsp marjoram

  • 1 tsp cumin

  • 1/2 tsp chili powder


  • Fry the diced beef on 3 tbsp olive oil until browned on all sides

  • Once browned, set the beef aside on a plate and then fry the onions, bell pepper, garlic and bacon for a few minutes

  • Add 500 ml of water and once it boils, add 2 tbsp tomato paste and the above spices and herbs. Stir well and cook on low for about 1,5 h. Occasionally check if there is enough liquid in the pot and add more water if needed.

  • Dice the zucchinis and add them to the stew and cook for about 25 more minutes. There should be enough liquid in the pot to cover zucchinis and beef
