Cheesy stuffed chicken breasts

A super easy and super delicious recipe with 10 minutes prep time + 40 minutes bake time. You can throw in some veggies with the chicken and have everything ready at once.





Ingredients:

• 500 g boneless chicken breasts

• 1 tbsp butter

• 2 tbsp sour cream

• 100 g feta cheese

• Cheese slices, 2 per breast (Cheddar, Gouda,...)

• 1/2 bell pepper, diced

• 1/4 red onion, diced

• Seasoning: salt, pepper, oregano, smoked paprika


Preparation:

• Lightly salt each chicken breast and sprinkle it with smoked paprika. Using a knife carefully make a pocket at the thickest part of each breast

• Grease your baking dish and align chicken breasts next to each other

• In a small bowl, mix together crumbled feta cheese, diced bell pepper, and red onion with sour cream and a pinch of salt, pepper, and oregano and stuff each chicken pocket. • Bake covered with aluminum foil at 180°C for about 35 minutes, until the chicken is cooked

• After 35 minutes, remove the foil and top each breast with 2 slices of cheese. Return to the oven uncovered and broil for about 5 more minutes until the cheese melts
