Beef, cauliflower and mushrooms casserole


Ingredients:


  • 2 tbsp olive oil

  • 1 small onion

  • 2 garlic cloves, chopped

  • 500 g minced beef

  • 400 g cauliflower rice, cooked

  • 170 g baby button mushrooms 

  • 1 small chilli pepper, chopped

  • 150 g shredded cheese 

  • 250 ml whipping cream

  • Seasoning: Salt, 1 tsp pepper, 1 tsp basil


Preparation:


  • Preheat the oven at 180°C

  • In a non stick pan, fry the onions on 2 tbsp olive until translucent. Add the chopped garlic and fry for a minute more.

  • Add the minced beef and cook for a few minutes until browned and then add the mushrooms and cook for about 10 more minutes until the mushrooms are tender.

  • Pour 250 ml of whipping cream over the beef, season it and stir until combined. Cook for a few more minutes until the sauce thickens.

  • Stir in the cooked cauliflower rice, transfer the mix in your casserole dish and top it with cheese.

  • Bake for about 20 minutes until the cheese gets a nice golden color.

  • Once baked, leave to rest for about 10 minutes before serving.
