Beef, cauliflower and mushrooms casserole
2 tbsp olive oil
1 small onion
2 garlic cloves, chopped
500 g minced beef
400 g cauliflower rice, cooked
170 g baby button mushrooms
1 small chilli pepper, chopped
150 g shredded cheese
250 ml whipping cream
Seasoning: Salt, 1 tsp pepper, 1 tsp basil
Preheat the oven at 180°C
In a non stick pan, fry the onions on 2 tbsp olive until translucent. Add the chopped garlic and fry for a minute more.
Add the minced beef and cook for a few minutes until browned and then add the mushrooms and cook for about 10 more minutes until the mushrooms are tender.
Pour 250 ml of whipping cream over the beef, season it and stir until combined. Cook for a few more minutes until the sauce thickens.
Stir in the cooked cauliflower rice, transfer the mix in your casserole dish and top it with cheese.
Bake for about 20 minutes until the cheese gets a nice golden color.
Once baked, leave to rest for about 10 minutes before serving.
