Keto Beef & Cabbage Casserole
Quick and easy low carb keto casserole that I made based on my keto cabbage lasagna recipe.
If you need some healthy low carb comfort food that doesn't require a lot of prep time, this keto beef & cabbage casserole is definitely it.
3 tbsp butter
1 small cabbage
500 g minced beef
1 small onion, chopped
3 garlic cloves, chopped
50 g bacon, bits
150 ml tomato passata (puree)
15 fresh basil leaves
4 tbsp mascarpone
Seasoning: 1/2 tsp salt, 1/4 tsp rosemary, 1 tsp oregano, 1 tsp parsley, 1 tsp chili powder, 1 tsp pepper
200 g grated cheddar + 100 g grated mozzarella (you can use any other full fat grated cheese)
Preheat the oven to 180°C
Slice the cabbage into thin strips and leave to rest until you prepare the meat
On 2 tbsp butter, saute the chopped onion for a few minutes, until it starts to brown. Add the chopped garlic and bacon bits and cook for a minute more.
Add the minced meat and cook until the meat is browned on all sides.
Add the tomato puree, stir and cook until the sauce gets thick. Season with 1/2 tsp salt, 1/4 tsp rosemary, 1 tsp oregano, 1 tsp parsley, 1 tsp chili powder, 1 tsp pepper, cook for about 5 more minutes and then remove from the stove and stir in 4 tbsp mascarpone and cabbage and stir until everything is combined.
Transfer the mixture to a greased baking tray and cover with grated cheese
Bake in the preheated oven at 180°C for about 30 minutes
Leave to rest for about 5 minutes before serving it
