Chicken & cauliflower rice pesto
Easy Keto chicken "risotto" with pesto

Ingredients:
• 2 tbsp olive oil
• 1 tbsp butter
• 500 g chicken breasts, diced
• 125 g smoked ham or bacon, diced
• 1 small onion, chopped
• 2 garlic cloves, minced
• 30 g sun-dried tomatoes, diced
• 2 tbsp mascarpone
• 2 tbsp pesto (pesto recipe)
• Seasoning: salt, pepper, 1 tsp basil, 1 tsp garlic • handful of fresh basil leaves • parmesan
Preparation:
• Fry the diced chicken on 2 tbsp olive oil until cooked and then set aside on a plate • Add 1 tbsp butter to the pan and sauté the onions until translucent. Add diced ham and fry for a few more minutes, regularly stirring. Add the garlic and fry for about a minute more.
• Return the chicken to the pan, add mascarpone, pesto, and cooked rice. Stir until everything is combined. • Season everything to your taste and serve topped with parmesan and fresh basil leaves
