Chicken & veggies soup

Keto chicken & veggies soup

Ingredients:

  • 2 tbsp olive oil

  • 1/2 medium-size onion

  • 1 chicken file

  • 1 small tomato

  • 4 few broccoli florets

  • 4 cauliflower florets

  • 1/2 bell pepper

  • 1/4 kale

  • 1 celery stick

  • 2 l water

  • Spices: 1,2 tsp salt (adjust depending on your taste), 1/4 tsp pepper, 1 tsp parsley, 1/2 tsp garlic, a pinch of cumin, chilly (optional)

Also:

  • 2,5 or 3 l pot


Preparation:

  • on 2 tbsp olive oil saute chopped onions for a few minutes (medium temperature)

  • add the chicken file cut into small cubes and saute until cooked on all sides

  • now add 2 l water to your pot and the rest of the veggies (cut in preferred size) and cook on medium to high until the soup boils

  • as soon as the soup boils, put the temperature on low, add the spices and let the soup simmer for at least 30 - 40 minutes
