Creamy kale & broccoli soup

Full of flavor and refreshing - this soup is a great appetizer or a light dinner choice.

The best part is, you will need only about 30 minutes to enjoy it.


  • 2 tbsp olive oil

  • 1 medium-size onion, chopped

  • 2 minced garlic cloves

  • 500 ml of water

  • 150 grams kale, chopped

  • 150 grams broccoli florets

  • Spices: salt, pepper, garlic, chilly (optional)

  • 4 tbsp Greek yogurt


  • On medium heat, saute the chopped onion on 2 tbsp olive oil until translucent

  • Add the minced garlic and cook for a minute more

  • Add kale, broccoli and 500 ml water and cook on medium until it boils

  • Once boiled, lower the temperature and add the spices

  • Cook until the veggies are soft

  • Once cooked, remove from stove and use your immersion blender to blend everything

  • Return to stove and stir until everything is combined

  • Once cooked, add 4 tbsp of Greek yogurt and stir everything together

Don't add the yogurt while still cooking the soup because it will separate into curds.
