Crispy oven baked trout


  • 2 whole trout, gutted and cleaned

  • olive oil

  • 5 sprigs of fresh parsley, chopped

  • 3 sprigs of fresh dill, chopped

  • 4 garlic cloves, crushed

  • 1 lemon, cut into thin slices

  • Seasoning: salt, pepper, paprika, garlic, rosemary


  • Heat the oven to 200°C/390°F

  • Spray your baking trey with some olive oil

  • Lightly oil each trout, salt it and place it in the baking tray

  • In a small bowl, mix together crushed garlic, 2 tbsp olive oil and chopped dill and parsley. Stuff the fish cavity with the mixture and place 2 slices of lemon into the cavity of each fish.

  • Sprinkle each fish with a dash of pepper, paprika, garlic and rosemary and rub them to evenly season

  • Bake at 200 for 20 -25 minutes (eyes should be white and the fish soft)
