Eggplant chunky chips and mackerel fillets


Ingredients:

• 4 mackerel fillets (or any other fish)

• 1 eggplant

• 3 eggs

• 4 tbsp olive oil

• 2 cups almond flour

• Spices: salt, garlic powder, chilly

You’ll also need:

• 2 bowls

• a frying pan

• a baking trey

• sheet of baking paper


Preparation:

• line your baking trey with the baking paper and sprinkle it with some olive oil (2 tbsp)

• cut the eggplant into chunky fries shapes

• in the 1st bowl, whisk 3 eggs with 1/4 tsp salt and 1/2 tsp garlic powder

• in the 2nd bowl mix the almond flour with some chilly

• Dip the eggplant into the eggs and then into the almond flour and place on the baking trey (leave some room between the fries in the trey to achieve crunchiness)

• bake in preheated oven, on 200° around 15 minutes

• while the chips are baking, lightly salt your fish fillets and coat them with almond flour (no eggs needed)

• heat 2 tbsp olive oil in the frying pan and fry the fish on medium to low for a few minutes on the both sides, until the crust is brown
