Eggplant rolls with cream cheese, tuna, and smoked salmon
It's not just about beauty with these rolls, a combination of smoked salmon, tuna, and cream cheese with grilled aubergine is amazing.

Ingredients:
• 8 thin slices of aubergine/eggplant
• 8 thin slices of smoked salmon
• 1 can tuna, flaked (I used Shines Wild Irish tuna in olive oil)
• 150 g cream cheese
• 1/2 lemon, squeezed juice
• 8 chives stems
• handful of lettuce leaves
• Seasoning: salt, pepper, garlic, chili flakes, parsley
Preparation:
• lightly salt the aubergine slices and drizzle them with olive oil. Leave to rest for about 10 minutes
• Add a bit of olive oil to your grilling pan, heat it up, and grill the aubergine slices. Seat aside on a plate and leave to cool a bit
• In a bowl, stir together juice from 1/2 of a lemon, cream cheese, seasoning and tuna flakes
• Spread the cheese and tuna on each aubergine slice, cover with 1 slice of salmon, and top with few lettuce leaves. Roll each slice carefully and tie a chive stem around it.
