Garlicky kale & asparagus with crispy bacon

Healthy and delicious low carb side dish or a main.



Ingredients:

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 150 g smoked bacon, diced

  • 2 garlic cloves, chopped

  • 125 g asparagus, cut into thirds

  • 200 g kale, chopped

  • Seasoning: salt, pepper, garlic


Preparation:


  • Cook the chopped kale in a pot of lightly salted water, drain well and set aside

  • In a non-stick pan, on 1 tbsp olive oil fry the diced bacon until crispy and then set aside on a plate

  • Add 1 tbsp butter to the pan and fry the chopped garlic until brownish.

  • Add asparagus and saute for a few minutes until tender.

  • Stir in the cooked kale and season to your taste with salt, pepper and garlic

  • Remove from the stove and stir in the crispy bacon
