Garlicky kale & asparagus with crispy bacon
Healthy and delicious low carb side dish or a main.
1 tbsp olive oil
1 tbsp butter
150 g smoked bacon, diced
2 garlic cloves, chopped
125 g asparagus, cut into thirds
200 g kale, chopped
Seasoning: salt, pepper, garlic
Cook the chopped kale in a pot of lightly salted water, drain well and set aside
In a non-stick pan, on 1 tbsp olive oil fry the diced bacon until crispy and then set aside on a plate
Add 1 tbsp butter to the pan and fry the chopped garlic until brownish.
Add asparagus and saute for a few minutes until tender.
Stir in the cooked kale and season to your taste with salt, pepper and garlic
Remove from the stove and stir in the crispy bacon
