Keto cheese & ham sandwich

Ideal picnic basket edition, this low carb sandwich is good both warm and cold.


The prep time is a bit longer but definitely not complicated and it always turns out perfect and tasty!


Instead of cream cheese, I used creamy cheese triangles in this recipe because they are also perfect for low carb lifestyle. You can spread them, eat them individually, cook with them - so many yummy options.




Ingredients:


Dough:

  • 250 grams full fat grated mozzarella

  • 2 cups almond flour

  • 1 creamy cheese triangle

  • 1 egg (beaten)


Filling:

  • 2 creamy cheese triangles

  • 10 slices of cooked ham

  • 10 slices of cheddar or some other low carb cheese

Preparation:

  • microwave mozzarella and cheese triangle for about 1:30 minutes

  • stir in 1 beaten egg and almond flour and kneed until you get everything combined

  • place the dough between 2 sheets of baking paper and roll it into a thin rectangle

  • spread 2 cheese triangles over the dough and cover it with ham and cheese

  • pick up the longer side of the dough and roll it like a roulade, close the edges

  • place it on a baking paper and bake in the preheated oven at 180°c for about 15-20 minutes, until it gets a nice golden color

You can top it with some seeds or just add some grated cheese on top 5 minutes before it's finished.
