Keto chocolate & nuts cake

Sweet and sour combination with crunchy topping and soft middle.

When sliced into 40 squares, nutrition facts per serving:

Calories: 37

Total carbs: 2 g

Net carbs: 1.5 g

Protein: 0.9 g

Ingredients:

  • 120 grams almond flour

  • 4 tbsp melted butter 

  • 2 egg whites

  • 50 grams dark chocolate

  • 3 tbsp almond flour

  • 15 medium size strawberries

  • 7 tbsp sweetener

  • Diced nuts (almonds, walnuts or hazelnuts)


Preparation:

  • In a pot, cook the strawberries with 1 tbsp sweetener for about 8-10 minutes and then mash them into puree and leave to cool 

  • In a separate bowl, melt 2 tbsp of butter and stir it with 2 tbsp sweetener and 120 grams of almond flour. Align the batter on a parchment paper in a baking tin and bake for about 5 minutes in a preheated oven at 200°C

  • While the batter is baking, mix 2 egg whites until firm peaks form and then gently stir in 4 tbsp sweetener, 3 tbsp almond flour and 50 grams of melted and a bit cooled down chocolate 

  • Remove the baked base from the oven after 5 minutes and evenly spread the strawberry jam on it

  • Now spread the chocolate batter over the strawberries and sprinkle with some diced nuts 

  • Bake in the preheated oven at 200°C for about 25 more minutes 

  • Leave the cake too rest for about 10 minutes before cutting
