Keto chocolate roulade

This one you absolutely must try! It’s easy, it’s keto and it has chocolate!


The taste reminds me of Ferrero Rocher, although it’s been a while since I last had it.


When cut into 16 slices, nutrition facts per slice:

Calories: 118

Total carbs: 1.6 g

Net carbs: 1.2 g

Fat: 11.1 g

Protein: 3.2 g


Ingredients:

  • 3 eggs

  • 1 tsp cider vinegar

  • 1/4 tsp baking powder

  • 100 g cream cheese

  • 20 g almond flour

  • 2 tbsp unsweetened cocoa

  • 3,5 tbsp sweetener

  • 75 g dark chocolate

  • 250 g Mascarpone

  • 1 tsp vanilla extract

  • Diced hazelnut


Preparation:

  • Preheat the oven to 150°C

  • Separate the egg whites from egg yolks and mix the egg whites with 1 tsp cider vinegar until firm

  • In another bowl, mix the yolks with 1/4 tsp baking powder and 2 tbsp sweetener until creamy and then add 100 g cream cheese, 20 g almond flour and 2 tbsp cocoa and mix for about a minute more

  • Gently fold the egg whites into the yolk mixture and align the mixture on a parchment paper

  • Bake for about 15 minutes

  • Once baked, while it’s still warm, roll into roulade shape and leave it to cool like that until you prepare the cream.

  • Melt 75 g of dark chocolate in the microwave and once it has cooled down a bit, using your mixer mix it with 250 g mascarpone, 1 tsp vanilla and 1,5 tbsp sweetener. Taste to see if you need more sweetener

  • Spread about 1/2 of the cream over the roulade, sprinkle with some diced hazelnuts and roll it

  • Use the leftover cream to decorate roulade, spread all over the roulade and use and again sprinkle with some diced hazelnuts

  • Leave to cool for at least 2 hours before serving
