Keto coconut balls

Ingredients:
250 g Mascarpone cheese
3 tbsp coconut oil
Pinch of salt
3 tbsp sweetener
1 tbsp vanilla extract
6 tbsp almond flour
8 tbsp coconut flour + some more for coating
optional: about 45 whole almonds or hazelnuts
This mixture should give you about 45 balls, size of Raffaello
Preparation:
Stir mascarpone with coconut oil, salt and sweetener and microwave it for up to a minute until it’s softened
Stir until combined and add the rest of the ingredients
Taste to see if you need to add more sweetener
Let it rest for a few minutes to become more firm
Using a teaspoon for a meassure, take a bit of the mixture and roll it in the desiccated coconut to form the ball, add the almond or hazelnut in the center and coat the ball
Leave to rest for about an hour
