Keto coconut balls


  • 250 g Mascarpone cheese

  • 3 tbsp coconut oil

  • Pinch of salt

  • 3 tbsp sweetener

  • 1 tbsp vanilla extract

  • 6 tbsp almond flour

  • 8 tbsp coconut flour + some more for coating

  • optional: about 45 whole almonds or hazelnuts

This mixture should give you about 45 balls, size of Raffaello


  • Stir mascarpone with coconut oil, salt and sweetener and microwave it for up to a minute until it’s softened

  • Stir until combined and add the rest of the ingredients

  • Taste to see if you need to add more sweetener

  • Let it rest for a few minutes to become more firm

  • Using a teaspoon for a meassure, take a bit of the mixture and roll it in the desiccated coconut to form the ball, add the almond or hazelnut in the center and coat the ball

  • Leave to rest for about an hour
