Keto creamy cauliflower soup
This low carb keto cauliflower soup is creamy, silky and super easy to make.
It will only take you about 5 minutes of prep time and about 25 minutes to cook it.

When serving this creamy cauliflower soup, I usually drizzle it with a bit of healthy olive oil or pumpkin seed oil which adds extra fat and flavor and it makes this keto bowl of soup even more beautiful.
You can also sprinkle your soup with some grated Parmesan or cheddar cheese, crispy bacon bits, freshly ground pepper or fresh herbs like parsley or thyme.

Keto creamy cauliflower soup
Ingredients:
2 tbsp olive oil
1 small onion
800 g cauliflower florets
800 ml of water
150 ml of double cream
Seasoning: salt, pepper, 1 tsp cumin, 1/2 tsp coriander, 2 stalks fresh thyme
Preparation:
Heat 2 tbsp of olive oil in a non-stick pot and then add the onions and cauliflower florets. Cook for about 10 minutes on low to medium, stirring occasionally, until the veggies start to brown
Pour in 800 ml of water, bring to boil, season and then lower the temperature and simmer until the cauliflower is soft.
Once cauliflower is soft, remove the soup from the stove and puree it using an immersion blender.
Return to stove, low temperature, and add 200 ml of whipping cream. Simmer for a few minutes until the soup is creamy enough. Taste to see if you need more seasoning.
Serve with a drizzle of healthy oil (olive, pumpkin seed, truffle), grated cheese, fresh herbs, crispy bacon or keto crackers.
