Keto savory cheese and zucchini pie

This pie can easily be served as a dinner or as an salty dessert. It is a perfect zucchini & cheese combo, light, salty and delicious, hot or cold.

Ingredients:
300 grams cottage cheese
200 grams sour cream
2 zucchinis (regular size)
100 grams coconut flour (if you have desiccated coconut, just process it a bit in your food processor)
2 eggs
Salt
Some Parmesan for the topping
Preparation:
Grate the zucchinis and leave them to rest for about 10 minutes
In another bowl stir the cottage cheese with sour cream and salt it. Taste to see if it's in accordance with your taste and don't over-salt it because the Parmesan will give it another salty layer later
Add the eggs and coconut flour to the cheese mixture and stir until combined
Squeeze the zucchinis to get rid of any extra water and add to the cheese mixture
Pour on a greased parchment paper and bake in the preheated oven at 180°C for about 40 minutes
After 40 minutes, take the pie out, cover it with a thin layer of grated Parmesan and bake for 10 - 15 minutes more
