Keto spicy eggplant

One more perfect side dish or a light dinner option.


Aubergine aka eggplant is an excellent source of fiber (3 g per 100 g), antioxidants, potassium, and vitamins B1 & B6. You can use it in so many ways, from desserts to some amazing dishes.


This side dish is easy, with a 5 min prep time and about 15 - 20 min bake time.

Ingredients:

  • Aubergine

  • Olive oil

  • Seasoning: salt, pepper, cinnamon, cumin, hot chili powder, garlic, and crushed chili


Preparation:


  • Dice the aubergine into small cubes, salt it lightly and leave to rest for about 5 minutes. Drain, drizzle with some olive oil, and then add a pinch of cinnamon, cumin, hot chili powder, garlic, and sprinkle with crushed chili

  • Bake at 180° for about 15 - 20 minutes, until soft
