Meatballs and veggie soup

Simple, quick and full of flavor, this soup will take you about an hour.


Ingredients: Meatballs:

  • 500 grams minced beef

  • 1 egg

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/4 tsp parsley

Soup:

  • 2 tbsp olive oil

  • 2 tbsp smoked bacon bits

  • 1 small onion, chopped

  • 1 celery stalk, chopped

  • 100 grams green beans

  • 1/2 zucchini, diced

  • few small broccoli florets

  • 1 red bell pepper, chopped

  • 2 tbsp tomato puree

  • 500 ml water

  • 1/2 tsp garlic powder

  • 1/2 tsp parsley

  • few chopped dill leaves

  • 1/2 tsp black pepper

  • 1/2 tsp cumin

  • 1/4 tsp salt

Preparation:

  • Start by preparing the meatballs, by mixing all the meatballs ingredients above and shaping the small balls

  • Add 2 tbsp olive oil in the pot and fry the meatballs for about 7-10 minutes, until brown on all sides and then set them aside on a plate

  • Add the chopped onion to the pot and sauté until translucent

  • Add the bacon bits, chopped celery and bell pepper and saute for 2 more minutes

  • Now add the meatballs, water and tomato puree and cook on medium until it boils

  • Once it boils, stir in the spices and herbs, add zucchini, broccoli and green beans and cook on low for about 35 minutes

  • Taste to see if you need more salt
