Meatballs with sweet tomato & garlic glaze

Tender beef meatballs glazed with sweet and garlicky tomato - perfect with you favorite fresh veggies.



Ingredients:

  • 500 g minced beef

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp garlic

  • 1 egg

For the glaze:

  • 2 tbsp olive oil

  • 3 tbsp tomato puree (tube)

  • 3 tbsp water

  • 1 tsp sweetener

  • 2 garlic cloves

  • 1 tsp parsley

Optional: mixed leaf lettuce, tomato, sesame seeds


Preparation:

  • Mix 500 grams of minced beef with 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic, and 1 egg. Once everything is combined, form the little meatballs

  • Bake on parchment paper at 180°C for about 25 minutes

  • While meatballs are baking, dice 2 garlic cloves in preferred size and fry on 2 tbsp olive oil, on medium, for a few minutes

  • Add the tomato puree diluted with water, 1 tsp parsley and 1 tsp of sweetener

  • Cook on medium for about 2 more minutes until combined

  • Taste to see if you need any extra spices

  • Once meatballs are baked, roll them in the sweet tomato glaze and serve with your favorite fresh veggies
