Pan grilled pork chops in creamy onion sauce
This is one of those great quick meals that you can cook in total of 30 minutes. It takes about 10 minutes to prepare everything + about 20 minutes of cooking.
4 pork chops
1 tbsp butter
1 tbsp olive oil
1 medium onion, chopped
1 tbsp tomato paste
100 ml water
1 tbsp mascarpone
Spices & herbs: salt, pepper, 1 tsp thyme, 1/2 tsp chili, 1 tsp garlic, 1/2 tsp cumin, 1 tsp smoked paprika, 1 tsp sweetener
Lightly salt the pork chops and if possible, leave them to rest for about 30 minutes before cooking them
On 1 tbsp butter, in non stick pan or in a cast iron skillet, fry the pork chops on medium temperature. It takes in average about 4-6 minutes per side but cooking time depends on the thickens of the chops.
While the chops are cooking, in a small pan on medium heat, fry the chopped onions on 1 tbsp olive oil until translucent. Add 1 tbsp tomato paste and 100 ml water. As soon as it boils, add 1/4 tsp salt, 1/4 pepper, 1 tsp thyme, 1/2 tsp chili, 1 tsp garlic, 1/2 tsp cumin, 1 tsp smoked paprika, 1 tsp sweetener. Stir and cook for about 5 minutes on medium, until everything combines, and then add 1 tbsp mascarpone. Stir and cook until you have a nice thick creamy sauce. Taste to see if you need any more seasoning.
Once the pork chops are grilled, cover them with a lid and leave to rest for about 5-10 minutes and then serve covered in sauce.
