Parmesan baskets with cottage cheese and peppers in <5 minutes

It will honestly take you less than 5 minutes to prepare this and it's a great refreshing option for breakfast, dinner or your Keto party. 


Tip: If you want to make more baskets for a larger party, I suggest you melt the Parmesan in the oven. Principle is the same, align the grated Parmesan on the baking paper in small circles/squares, leave room in between them, and bake for about 3-5 minutes on 175 o C


Ingredients:


For 1 basket, you will need:


  • few tablespoons grated Parmesan cheese 

  • few tea spoons cottage cheese

  • salt

  • bell peppers cut into small cubes 

  • pinch of basil or chives


You will also need:


  • 1 microwavable plate

  • baking paper

  • small glass or a bowl to shape your basket


Preparation:


  • Spread the grated Parmesan on a plate lined with the baking paper, shape in circle or square depending on the desired shape

  •  microwave it until melted (1,5 - 2 mins)

  • remove from microwave and let it cool for about 30 seconds

  • cover it (together with the paper) over the bowl or a glass

  • form it a bit with your hands and leave to cool for a minute

  • fill the basket with a mix of cottage cheese and peppers 

  • fill the basket with a mix of cottage cheese and peppers and sprinkle with some basil or chives
