Pepperoni and feta muffins

One more simple idea for light breakfast, dinner or party food.

These delicious muffins are made of 6 ingredients, they take 5 minutes to prepare and about 7-10 minutes to bake.

Ingredients (6 muffins tin):

  • 18 slices of pepperoni

  • 100 grams feta

  • 2 tbsp sour cream

  • 6 fresh basil leaves, chopped

  • 6 pieces of chopped jalapeno

  • 1 cup mozzarella, grated

Preparation:

  • Line each muffin cup with thin slices of pepperoni (I needed 3 per cup)

  • Mix the feta and sour cream with fresh chopped basil and with a help of 2 teaspoons fill the half of each pepperoni cup

  • Top each muffin with grated mozzarella and chopped jalapeno

  • Bake in the preheated oven at 200°C for about 5 - 10 minutes

  • Take the muffins out of the oven and leave them to cool for a few minutes in the tin

  • The muffins will be pretty greasy so place them on a paper towel for a few more minutes before serving
