High in protein and vitamins, prawns should definitely be a part of a low carb menu.
This salad is quick to prepare, refreshing and delicious. It can be an excellent appetizer, light dinner or you can use it to fill your low carb wraps.
150 g prawns
1 tbsp olive oil
1 tbsp mayonnaise
2 tbsp Greek yogurt
1 small celery stick
1 cup iceberg lettuce
Spices: salt, pepper, paprika, parsley, garlic, crushed chilly
Marinade the prawns for a few minutes in a mixture of 1 tbsp olive oil, paprika, salt, pepper and garlic
While they are marinating, prepare your veggies - chop the cucumber and celery and cut the lettuce. Add 1 tbsp mayo and 2 tbsp Greek yogurt and stir until combined.
Grill the prawns for 2 - 3 minutes on medium in a non stick pan
Once finished, pour the juices from the pan on your veggies, add prawns and stir everything until it's combined
Taste to see if any more spices are need
