Pull appart keto sandwiches
Resistance is futile when it comes to eating these little sandwiches.

Ingredients:

• 350 grams mozzarella
• 160 grams almond flour
• pinch of salt and baking powder
• 2 eggs
Filling:
few slices of ham
cheddar
3 tbsp tomato sauce
Spices: Oregano, chilly, salt
Poppy seeds to sprinkle the buns
3 tbsp olive oil
Preparation:
• microwave mozzarella mixed with almond flour, salt and baking powder for 90 seconds (until melted)
• add the eggs and tread the dough until everything is combined
• form small balls and align them on baking paper (i left the space in the center because I wanted the melted cheese there)
• bake 15 minutes on 180 °c (until golden)
Once baked, leave to cool and prepare the filling:
• dice few slices of sandwich ham into small cubes and mix them with 3 tbsp tomato puree, 3 tbsp water, oregano, chilly and pinch of salt
• cut the pull-apart buns through the middle (you want to carefully remove the top) and spread the filling over the bottom part
• add a cube of cheddar on each bun and cover with the top part
Topping:
• stir 3 tbsp olive oil with 1 tbsp poppy seeds, pinch of salt, oregano, garlic and chilly and spread over the top part
Bake for 5 more minutes on 200°c
