Quick Keto cheddar and Pork cracklings Crackers

These keto crackers are easy and quick to make and you will only need 4 simple ingredients.


They are cheesy, crunchy and the pork cracklings just add a special aroma to these gluten free and guilt free keto snacks.

Main ingredients for these crackers are almond flour, egg, pork cracklings and cheddar cheese.


I used homemade pork crackling but you can use the store bought cracklings or rinds.




Aren't cracklings and rinds the same thing?


Both cracklings and rinds are a perfect and delicious low carb keto snack but they are not the same.


The difference between pork cracklings and pork rinds is that cracklings are made of pork fat with or without some skin and meat attached. They are fried in their own fat so if you are making them at home, there is a bonus with your homemade crackling - you also get lard aka pork fat.

Pork rinds on the other hand are basically pork skin without fat or meat on it. There are many ways of preparing these delicious crunchy snacks and also many uses but we will cover that in some other post.

Quick Keto cheddar and Pork cracklings Crackers


Ingredients:

  • 90 g almond flour

  • 30 g pork cracklings or pork rinds, smaller pieces

  • 1 egg

  • 115 g cheddar, grated

  • 1/2 tsp salt

Preparation:

  • Preheat the oven to 190°c

  • Stir together almond flour, salt, pork cracklings and cheese and then add the whisked egg

  • Kneed the batter with your hands until the dough forms

  • Roll the dough thinly between 2 pieces of parchment paper. The thinner you roll the dough, the crunchier the keto crackers will be

  • Cut the keto dough into desired crackers shape using a pizza cutter or cookie shapes, and place them on a lined baking tray

  • Bake in the preheated oven at 190°c for about 10 minutes, until golden and crispy

  • Once baked, leave the crackers to cool for a few minutes

  • Store the crackers in an airtight container and keep them in the fridge if not used the same day
