Roasted pork tenderloin
Juicy and soft on the inside and with a nice crispy and spicy coat on the outside - pork tenderloin is a really special roast.
You will need about 30 minutes in total to serve it.
500 grams pork tenderloin
2 tbsp olive oil
Spices: Salt, pepper, thyme, garlic, cumin, sweet paprika and crushed chilly
Preheat the oven at 200°c
Using a fork, poke the tenderloin all over and rub it all over with olive oil and spices
Bake at 200°c for about 25 - 30 minutes
If you have a meat thermometer, inner temperature should be around 70°c for medium.
If you want it to be a bit rare, pink in the middle, take it out of the oven when the inner temperature is around 60 °c (about 15-20 minutes in the oven)
Once finished, leave it to rest for about 5 minutes before you slice it
As a side dish, excellent choice would be cauliflower mash.
