Another great low carb Balkan dish (Bulgaria origins). This salad is a perfect cold side dish, especially for grilled meat, and it’s quick and easy to prepare.
The main ingredients for this salad would be tomatoes, cucumber, and feta cheese but there are many versions of the recipe.
• 1 cucumber, diced
• 1 bell pepper, diced
•.10 cherry tomatoes or 2 large tomatoes, diced • 1 hot chili pepper (optional), diced • handful of olives (optional) • 1/2 red onion, chopped
• Fresh parsley, chopped
• Seasoning: salt, pepper, vinegar, olive oil
• 150 g feta cheese or vegan feta substitute
• Place the vegetables in a bowl, season to your taste with olive oil, vinegar, salt, and pepper, and stir until combined
• Crumble feta cheese on top and serve cold
