Skillet grilled eggplant and beef strips
This healthy and easy recipe takes about 15 minutes to prepare and cook. I used a cast iron skillet to grill it and it was absolutely delicious.
1 eggplant / aubergine
600 g beef strips
Seasoning: salt, pepper, garlic powder, hot chili powder
cut the eggplant into thin slices, lightly salt it and leave to rest for a few minutes
Put the beef strips in another bowl, add some olive oil and seasoning and stir well
Heat your cast iron skillet on medium-high and grill the beef (place in one layer) for a few minutes on all sides until browned and cooked the way you like it.
Once the beef is cooked, set it aside and cover with a lid until you finish grilling the eggplant
Drizzle some olive oil over the eggplant slices and lightly season them with pepper, garlic and hot chili powder.
Grill the eggplant slices for about 3 minutes per side and once finish, drizzle with a bit of olive oil
Serve with some fresh veggies
