Spicy meatloaf stuffed with cheese & ham
Juicy meatloaf with ham and cheese stuffing, glazed with spicy tomato, onions and garlic combo.
500 g minced beef
50 g smoked bacon, diced
150 g cauliflower, rice
1 big hot chili pepper, chopped
1/2 bell pepper, chopped
1 celery stalk, chopped
Seasoning: 1/2 tsp salt, 1 tsp pepper, 1/4 tsp coriander, 1/2 tsp cumin, 1 tsp parsley, 1 tsp oregano, 1 tsp paprika, 1 tsp garlic, 1 tsp hot chili powder
6 slices of ham
150 g grated mozzarella or cheddar cheese
1 tbsp olive oil
1 tsp butter
1 small onion, chopped
2 garlic cloves, chopped
1 tbsp cider vinegar
1 tsp erythritol
3 tbsp tomato paste (concentrate) mixed with 2 tbsp water
Seasoning: salt, pepper, garlic, crushed chili
Preheat the oven at 180°C/350°F
In a big bowl, stir minced meat with bacon, cauliflower rice and chopped veggies. Add the seasoning and 1 egg and stir just until everything is combined.
Place 1/2 of the meat mixture into lightly greased loaf pan and using your hands, press it really well. Push the center of the loaf in and distribute some meat on the sides of your tin, creating a rim. Place 3 slices of ham in the center, top with cheese, cover with more ham and then top with the other half of the meat mix. Press the loaf well into the tin and bake at 180°C/350°F for about 45 minutes.
While the loaf is baking, prepare the sauce. Heat 1 tbsp olive oil and 1 tsp butter and add the chopped onion. Fry on medium temperature and stir occasionally until the onions start turning brown. Add the garlic and fry for a minute more. Sprinkle the onions and garlic with a tsp of erythritol and then add 1 tbsp vinegar. Cook on medium for 2 more minutes and then add tomato mixed with water and season to your liking.
After 45 minutes of baking, once turned brown on top, take the loaf out of the oven and top it with the prepared glaze.
Return to oven, turn it to broil and broil for about 10 more minutes
Once finished, cover the meatloaf with a tin foil and leave to rest for about 10 minutes before serving it.
