Stuffed zucchini rings
These zucchini rings recipe requires 4 main ingredients and a bit of spices.
Prep time is around 10 - 15 minutes + 35 minutes bake time.
250 grams minced meat
1/4 tsp salt, dash of pepper, dash of cumin, dash of parsley
2 zucchinis (about 5,5 inches long)
3 tbsp mayonnaise
1/2 cup grated full fat cheese (cheddar, mozzarella)
Cut the zucchinis into 0,5 inch thick rings, you should get about 11 per each. Using a teaspoon or a knife, carve the center of each ring, making them hollow and leave them to rest
Squash the carved midpoint with a fork or in your food processor and mix it with minced meat, 1/4 tsp salt, dash of pepper, dash of cumin and dash of parsley
Place the zucchini rings on a parchment paper and fill them with the prepared stuffing
Bake at 180°C for about 30 minutes
After 30 minutes, take the rings out, top them with a small amount of mayo and grated cheese and return to the oven for an extra 5 minutes, until they get a nice golden crust
