Summer risotto
Perfect healthy and low carb side dish or main.

Ingredients:
2 tbsp olive oil
300 g cauliflower rice
1 small onion
1 bell pepper, chopped
1 hot chili pepper (optional), chopped
1 courgette, diced
1 tomato, chopped
2 tbsp tomato paste
50 ml of water
Seasoning: salt, pepper, 1 tsp paprika, 1/2 tsp chili powder, 1 tsp parsley, 1 tsp basil
Preparation:
Heat 2 tbsp of olive oil and fry the onions on medium temperature until translucent
Add the chopped bell pepper, chili pepper and courgette and cook on medium until the liquid evaporates
Add 50 ml of water, tomato paste and cauliflower rice
Cook for about 10 more minutes, until veggies are soft and the excess liquid evaporates
