Summer risotto

Perfect healthy and low carb side dish or main.


Ingredients:


  • 2 tbsp olive oil

  • 300 g cauliflower rice

  • 1 small onion

  • 1 bell pepper, chopped

  • 1 hot chili pepper (optional), chopped

  • 1 courgette, diced

  • 1 tomato, chopped

  • 2 tbsp tomato paste 

  • 50 ml of water

  • Seasoning: salt, pepper, 1 tsp paprika, 1/2 tsp chili powder, 1 tsp parsley, 1 tsp basil

Preparation:

  • Heat 2 tbsp of olive oil and fry the onions on medium temperature until translucent

  • Add the chopped bell pepper, chili pepper and courgette and cook on medium until the liquid evaporates

  • Add 50 ml of water, tomato paste and cauliflower rice

  • Cook for about 10 more minutes, until veggies are soft and the excess liquid evaporates
