Quick keto risotto with tomato and sardines
Delicious low calorie and low carb dinner ready in 15 minutes.
I used zero carb konjac rice with this meal but cauliflower rice would also be a great choice.
If divided into 4 portions, nutrition facts per serving:
Total carbs: 6.9 g
Net carbs: 5 g

2 tbsp olive oil
1 small onion, diced
2 garlic cloves, crushed
3 tbsp tomato paste + 50 ml water
2 cans of sardines (I used Shines Wild Sardines in olive oil), flaked with a fork
Spices: salt, 1 tsp parsley, 1/2 tsp garlic, 1/2 tsp pepper, 1 tsp basil, fresh dill
Konjac or cauliflower rice, cooked
Heat 2 tbsp olive oil and fry the onions until translucent. Add crushed garlic and fry for a minute more.
Add 3 tbsp tomato paste and 50 ml water and bring to boil. Season with a dash of salt, 1/2 tsp pepper, 1/2 tsp garlic, 1 tsp basil and 1 tsp parsley and stir to combine
Remove from the stove and stir in the rice and sardines with the canned oil and sprinkle with fresh dill
