Quick keto risotto with tomato and sardines

Delicious low calorie and low carb dinner ready in 15 minutes.

I used zero carb konjac rice with this meal but cauliflower rice would also be a great choice.


If divided into 4 portions, nutrition facts per serving:

Calories: 190

Total carbs: 6.9 g

Net carbs: 5 g

Fat: 12.4 g

Protein: 13.1 g



Ingredients:

  • 2 tbsp olive oil

  • 1 small onion, diced

  • 2 garlic cloves, crushed

  • 3 tbsp tomato paste + 50 ml water

  • 2 cans of sardines (I used Shines Wild Sardines in olive oil), flaked with a fork

  • Spices: salt, 1 tsp parsley, 1/2 tsp garlic, 1/2 tsp pepper, 1 tsp basil, fresh dill

  • Konjac or cauliflower rice, cooked

Preparation:

  • Heat 2 tbsp olive oil and fry the onions until translucent. Add crushed garlic and fry for a minute more.

  • Add 3 tbsp tomato paste and 50 ml water and bring to boil. Season with a dash of salt, 1/2 tsp pepper, 1/2 tsp garlic, 1 tsp basil and 1 tsp parsley and stir to combine

  • Remove from the stove and stir in the rice and sardines with the canned oil and sprinkle with fresh dill
