Tuna & smoked pancetta muffins
Keto, healthy, easy, delicious!
Ingredients (6 muffins):
2 tbsp cream cheese
20 g almond flour
50 g grated cheddar
1 small chili pepper, diced
15 g smoked pancetta, diced
1 can of tuna (I used Shines Wild Irish tuna in olive oil), flaked
1/4 tsp baking powder
1 tsp cider vinegar
3 basil leaves, chopped
Seasoning: salt, pepper, 1 tsp parsley, 1 /2 tsp crushed chili
Topping: 20 g grated parmesan, 20 g grated cheddar or mozzarella, 5 capers (chopped)
Preheat the oven at 180°C/ 350F
In a bowl, whisk together eggs and cream cheese. Add the baking powder, vinegar and almond flour and stir well until combined.
Add the chopped chili, grated cheese, flaked tuna, pancetta, basil and seasoning and bake for about 20 minutes.
Take out of the oven, top with parmesan, cheddar and chopped capers and broil for about 5 minutes.
