Tuna, smoked salmon, zucchini and leeks - Super food dinner

Super food in this super fast combination is a perfect light dinner choice.

It's quick to prepare, delicious, low carb and healthy.

If divided into 4 portions, nutrition facts per serving:

Calories: 252

Total carbs: 7.9 g

Net carbs: 6.6 g

Fat: 16.4 g

Protein: 17.6 g


  • 2 tbsp olive oil

  • 2 leeks, chopped

  • 1 zucchini, diced

  • 100 g salmon (smoked or canned)

  • 125 g canned tuna (I used Shines Wild Irish Tuna in chili oil)

  • 3 tbsp mascarpone

  • Seasoning: salt, pepper, garlic, parsley, cayenne pepper, and crushed chili, oak smoked salt (optional)


  • In a pan, heat 2 tbsp olive oil and saute diced zucchini and chopped leeks until they are soft enough for you

  • Add the seasoning to your liking and stir in 3 tbsp mascarpone. Cook and stir for a few minutes until mascarpone melts and then remove from stove. Stir in the smoked salmon and tuna until combined. Taste to see if you need more seasoning.

  • Sprinkle with some crushed chili and drizzle with oil from your tuna can
