Mini bell peppers stuffed with tuna
This breakfast, appetizer or lunch box idea is ready in 10 minutes - you would need 5 min prep + 5 min bake time for this mad good dish.
Each stuffed half has only about 26 calories, 0.6 g total carbs, 1.3 g fat and 3.1 g protein
10 mini bell peppers
1 can of tuna (I used Shines Wild Irish tuna in olive oil)
2 tbsp mascarpone
fresh mozzarella (I used 3 mini mozzarella balls)
Seasoning: salt, chili flakes, fresh dill, parsley,
Preheat the oven 200°C/390°F
Wash and slice the mini bell peppers in half
In a separate bowl, stir together tuna with mascarpone, parsley and a pinch of crushed chili until combined and taste to see if you need any salt. Feel free to use some olive oil from the tuna can in the mixture.
Stuff the peppers with the mixture and top them with small slices of fresh mozzarella
Broil for 5 minutes until the cheese melts
Sprinkle with fresh dill and serve with your favorite sauce
