Mini bell peppers stuffed with tuna

This breakfast, appetizer or lunch box idea is ready in 10 minutes - you would need 5 min prep + 5 min bake time for this mad good dish.

Each stuffed half has only about 26 calories, 0.6 g total carbs, 1.3 g fat and 3.1 g protein


  • 10 mini bell peppers

  • 1 can of tuna (I used Shines Wild Irish tuna in olive oil)

  • 2 tbsp mascarpone

  • fresh mozzarella (I used 3 mini mozzarella balls)

  • Seasoning: salt, chili flakes, fresh dill, parsley,


  • Preheat the oven 200°C/390°F

  • Wash and slice the mini bell peppers in half

  • In a separate bowl, stir together tuna with mascarpone, parsley and a pinch of crushed chili until combined and taste to see if you need any salt. Feel free to use some olive oil from the tuna can in the mixture.

  • Stuff the peppers with the mixture and top them with small slices of fresh mozzarella

  • Broil for 5 minutes until the cheese melts

  • Sprinkle with fresh dill and serve with your favorite sauce
